Spring Mix with Apples, Walnuts and Maple Mustard Vinaigrette

In this spring salad, it’s all about the Maple Mustard Vinaigrette!

Ingredients

  • 2 tablespoons apple cider vinegar
  • 2 tablespoons minced shallot
  • 1 tablespoon dark maple syrup
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 1/4 cup neutral oil (such as canola, vegetable or grapeseed)
  • 1 small tart apple, sliced
  • 1/4 cup chopped walnuts, toasted
  • 4 cups spring mixed greens, washed and dried

Instructions

In the bottom of a large salad bowl, combine vinegar and shallot. Let sit for 10 minutes. Whisk in maple syrup, mustard, salt and pepper. Continue to whisk the mixture while very slowly adding the oil so that the vinaigrette emulsifies. Lay the apples and nuts on top of the dressing. Add greens to the bowl. The salad can sit in the bowl for up to an hour. Toss well just before serving.
