Fromage Blac and Coriander Crudite Dip

Fromage Blanc is a fresh and slightly drained cows' milk cheese that many local producers are making with more frequency. If you can’t get hands on it, substitute crème fraiche or Greek-style yogurt.

Ingredients

  • 1 teaspoon coriander seeds
  • ¼ teaspoon cumin seeds
  • ¾ cup Fromage Blanc
  • 2 tablespoons milk
  • 1 tablespoon olive oil
  • 1 tablespoon chopped cilantro leaves
  • 1 tablespoon chopped mint leaves
  • 1 teaspoon lemon zest

Preparation

Pour coriander and cumin seeds in a small pan over medium heat and toast them for 60 seconds. Crush them finely with a pestle and mortar or a spice grinder. In a medium bowl, vigorously whisk all of the ingredients together. Let sit 15 minutes, season with salt and pepper to taste. Serve immediately or cover and refrigerate for up to three days.
