Chorizo and White Bean Tacos

This homemade chorizo includes lean ground pork kneaded with herbs and spices. Simmered with creamy white beans and tart crushed tomatoes, it doubles as a warming autumn chili.

Ingredients

  • 1 pound ground pork
  • 3 medium cloves garlic, minced
  • 2 tablespoons smoked paprika
  • 1½ tablespoons sweet paprika
  • 1½ tablespoons cider vinegar
  • ½ teaspoon dried oregano
  • ½ teaspoon ground coriander
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon chili flake
  • 1 tablespoon olive oil
  • ½ yellow onion, diced small
  • 1½ cups cooked white beans
  • 1½ cups crushed tomatoes

Preparation

Knead the pork in a medium bowl with the next nine ingredients, until fully combined. Set aside. Heat the olive oil in a large sauté pan. Add the onion and cook over mediumlow heat until it begins to soften, about 5 minutes. Add the pork mixture, increase the heat to medium-high and brown the meat, stirring occasionally. Add the white beans and crushed tomatoes, stir, bring to a simmer, cover, and reduce heat to low. Simmer 15 minutes until thickened slightly. Serve or reheat for up to 3 days.
